Recipe of the week: Quick and easy 20 litre bucket scones recipe

If you’re hosting your family during the festive season, you don’t want to be cooped up in the kitchen baking all day. This 20 liter bucket scones recipe is ideal. You’ll also have less time in the kitchen if you’re load-shedding, so it’s best to get as much done at once as possible.

20 litre bucket scones recipe

Ingredients for basic scones:

  • 24 cups flour
  • 24 tsp baking powder
  • 1tsp bicarbonate of soda
  • 1tsp salt, optional
  • 3 1/2 cups sugar
  • 1kg butter – Rama margarine or Stork bake
  • 12 large eggs
  • 1.6 Litre amasi
  • 2 tbs vanilla essence

Method:

  1. Preheat oven to 180°C.
  2. In a large bowl, cream the sugar and margarine.
  3. Add flour, baking powder and bicarb.
  4. Mix by rubbing the ingredients between your hands until it resembles fine breadcrumbs.
  5. Create a well in the middle and add the eggs, vanilla essence and half of the amasi.
  6. Knead the dough and gradually add the remaining amasi until all the ingredients are nicely combined.
  7. Roll onto a lightly floured surface and cut the dough at approximately 1cm in height.
  8. Place the scones in a greased pan and brush the tops with egg wash.
  9. Bake for approximately 25 minutes (the time will depend on your oven).

You’ll have a full 20 litre bucket of scones to entertain your family and friends during the holidays. Serve your scones with apricot or strawberry jam and deliciously whipped cream. This recipe was found on the Khutjo Cakes and Forks Facebook page.
