Rainbow Bean and Feta Buddha Bowl- Feeds 4

Ingredients:

1 tin of chickpeas

1 tin of 4 bean mix

1 small tin of small kernel corn

A handful of crumbled feta cheese

1 large red onion, diced

Pinch of  black pepper

2 teaspoons mayonnaise

3 tablespoons grated beetroot

1 sliced red pepper

1 handful chopped coriander

Optional: Garnish with chopped Almonds for an extra crunch

Method: Drain chickpeas, 4 bean mix and corn and place in a large mixing bowl. Add diced red onion, feta, grated beetroot, sliced pepper, and coriander to the bowl. Combine all the ingredients together with mayonnaise and season with black pepper. – Supplied
